What if Eragon scrying Arya wasn't because of the Eldunarí?

In book four, the Eldunarí that Eragon finds on Vroengard tell him that they're the reason he was able to scry Arya in his sleep.

However, what if that wasn't actually the reason Eragon could scry someone he had never seen before in a place he had never been to before? What if, assuming that Saphira could sense/see while in her egg, during her time in Uru'baen, she had at some time been to that cell, and it was through their mental link that Eragon saw the room and Arya?

The Eldunarí could have just influenced his ability to scry while sleeping, thinking that they're the reason he was able to see Arya at all.

I think it rather unlikely. Saphira couldn’t actually _see_, & even if she had, you can’t scry something someone else saw if you haven’t seen it yourself. At best, Saphira’s own magic might have bent reality to allow Eragon to do it, but I think the Eldunarí explanation is the simplest & most likely.

Although Eragon had not seen the cell himself, and assuming that Saphira could "see" through her egg, wouldn't it be possible, through their mental link?

No. I’m fairly certain you have to see it to scry it, not just take memories out of someone. I’m not sure where that’s stated though; would probably have to reread.
