I don't think Greeni will have an important part in the story if he hatches now, other than making his rider immortal, and thus a potential companion for Eragon/Murtagh. Because, if the last egg hatches now, its dragon will be only a baby, and unable to fight. (And I doubt we will have large chronolical gaps in the story) Also, I doubt that if the egg hatces for someone from the 'good' side, they will force it to grow abnormaly, like Galabatorix did with Thorn.
In other words, in order for the last egg's dragon to play an important part into the story, I think it will hatch for someone on Galby's side (although I can think of none), or that it has already hatched. Remember, the events considering the loss of the last egg are obscure. Nobody mentioned exactly what has happened to the last egg. Oromis said that the man who was supposed to steal the eggs ran away with Saphira's egg only, for unknown reasons, and he added that Morzan caught up with him and seized the egg, but he didn't say that Morzan killed him. (Maybe he was too busy fighting Brom afterwards) Presumably, he is still alive, and maybe he has stolen the other egg and hidden it somewhere...
